History Of Rice Pudding
Although the exact origin of rice pudding is still unknown, legends point towards Asia, such as- Pakistan, India, and Uttarakhand where rice has been harvested and consumed. Back in the 8th century, rice began its journey from North Africa to Europe, thanks to the Moors. It spread to places like Spain and Portugal, where people put their own twists on rice pudding over time. They added spices, nuts, and fruits to create different versions of the dish that matched their local flavours.
Surprisingly, rice pudding didn’t show up in England until the 14th century. You can find a recipe for it in one of the oldest cookbooks from the UK, called “The Forme of Cury,” which means “The Method of Cooking.” This cookbook is thought to have been put together by the Master Cooks who worked for King Richard II.
In the beginning, rice pudding was a fancy treat only enjoyed by the rich folks. Rice was a pricey ingredient that came all the way from the East, making it a luxurious import. It wasn’t until the 18th century that things started changing. As ingredients became cheaper, regular people could finally afford rice too. This shift continued over time.
